농후미(濃厚味)
혀로 느낄 수 있는 맛의 종류 중 단맛, 신맛, 짠맛, 쓴맛, 우마미
그리고 새롭게 부각되고 있는 새로운 맛으로 일본어로 고꾸미라고 표현하며,
이것을 우리 나라말로는 농후미(濃厚味)라고 표현합니다.
고꾸미는 맛의 펀치감(힘)을 더해주며 풍부하고 진한 맛을 살려
맛의 밸런스를 잡아주는 역할을 합니다.

우마미(감칠맛)이란?

맛이 좋은 느낌
혀가 느낄 수 있는 단맛, 신맛, 짠맛, 쓴맛 외의
제 5의 미각, '우마미'는 일본어로 '맛이 좋은 느낌'이라는 뜻을 가집니다.
「제 5의 맛」에 관한 학설은 1908년 일본 도쿄제국대학의 이케다 기쿠나에 박사가
해초 수프의 특이한 맛을 발견, 이 맛을 유발하는 분자를 분리해낸 뒤
이를 「우마미」(うまみ·旨味)라고 부른데서 시작되었습니다.
매일식품의 우마미 소재는 MSG 100이 아닌 최대 50% 함유로 여러 아미노산이 골고루 혼합되어 있어
MSG 혼자 있을 때보다 맛을 더 돋구어 주어 제품 첨가시 지속성을 더 가집니다.
